Its Friday morning at Jos and there are a couple of dozen folks enjoying the chill air. Tom, with the green bandana, is sweeping up aound the place and extolling the virtues of the new espresso machine, the La Marzocco. Well have the scoop on this in an upcoming blog episode. Its a nice view from the Jos front deck of Amys Ice Cream, Zen restaurant, and the Hotel San Jose. Tom cranks up the ipod and the music resumes.

The Birth of Coffee is a multiplatform, media project consisting of a book, an international photographic exhibition tour and a complementary web site. The goal of the project is to extend the individual’s personal coffee experiences, providing them with an understanding of the many people, places and processes involved in bringing coffee to the table.
To complete this project, the author and photographer traveled a quarter of a million miles to five continents and eight countries documenting and recording the world’s coffee cultures. They followed the coffee cycle from a single seed at planting, to harvest, processing, shipping and the final cup.

The Birth of Coffee is a special project of The Image Expedition, a documentary photography organization that produces “visual artifacts” for the next generation.

Rose of Jo’s Coffee South, Austin, TX shows us how the pros make a mocha. It’s on an early Tuesday morning in Austin and it’s just before the big crowd shows up at Jo’s.

A Café Mocha is a variant of a cafe latte. It is simply a chocolate latte. Like a latte it is typically one third espresso and two thirds steamed milk, but a shot of chocolate is added. Typically the chocolate is in the form of an Italian syrup, although less sophisticated vending systems use instant chocolate powder. Whipped cream, dustings of cocoa and marshmallows may also be added on top for flavour and decoration.
This being an American invention, it is mostly unknown in Italy and other continental European countries. Mocha was originally a particular variety of coffee from Mocha, Yemen, made without cocoa, but which tasted as if it had cocoa in it, and modern usage usually refers to an imitation of it using other coffee varieties and cocoa.
A variant is white café mocha, instead made with a shot of white chocolate.
A term moccaccino is used in some regions of Europe and the Middle East to describe cappuccino with cocoa or chocolate.
